Eggplant Parm
from Chris's kitchen.

Sliced eggplant dipped in egg and breadcrumbs, fried in olive oil, then topped with Sause and mozzarella cheese and broiled till brown.

Ingredients

  • 1 nice purple/firm eggplant
  • 2 eggs
  • salt
  • garlic powder
  • Italian breadcrumbs
  • olive oil
  • Sause
  • mozzarella cheese

Steps

  1. Pick a nice purple/firm eggplant, remove skin and cut into 1/4 or 1/2 inch disk.
  2. Mix egg mixture (same as Chicken Parm/Cutlets).
  3. Dip in egg mixture then breadcrumbs, pressing firmly.
  4. Fry in olive oil, both sides until tender with fork.
  5. Top with Sause and mozzarella cheese.
  6. Broil on top rack of oven till brown.
