Mama's Sause

Chris's speggi Sause base with Cannellini beans stirred in the last hour, finished with pasta and reserved pasta water.

main italian 3 hrs on low heat

Ingredients

  • 1-28oz can crushed tomatoes
  • 1 can diced tomatoes
  • 1/4 c. olive oil
  • 1/2 teaspoon dried Italian spices
  • 2-3 diced garlic cloves or 1/4 teaspoon garlic powder
  • 1 tablespoon sugar
  • 3-15.5oz cans of Cannellini beans
  • pasta (any kind)
  • reserved pasta water

Steps

  1. Heat 1/4 c. olive oil, add Italian spices & garlic, sauté approx 1 min until garlic is light brown.
  2. Add 1-28oz can crushed tomatoes, 1 can diced tomatoes + 1 tablespoon sugar.
  3. Cook 3 hrs on low heat.
  4. In the last hr of cooking, add 3-15.5oz cans of Cannellini beans.
  5. Cook any kind of pasta, reserve 2 cups of pasta water.
  6. Drain pasta and add to Sause.
  7. Let sit 10 min.
  8. Add some reserved pasta water if needed.
