Pasta + Beans
from Chris's kitchen.
Chris's speggi Sause base with Cannellini beans stirred in the last hour, finished with pasta and reserved pasta water.
Ingredients
- 1-28oz can crushed tomatoes
- 1 can diced tomatoes
- 1/4 c. olive oil
- 1/2 teaspoon dried Italian spices
- 2-3 diced garlic cloves or 1/4 teaspoon garlic powder
- 1 tablespoon sugar
- 3-15.5oz cans of Cannellini beans
- pasta (any kind)
- reserved pasta water
Steps
- Heat 1/4 c. olive oil, add Italian spices & garlic, sauté approx 1 min until garlic is light brown.
- Add 1-28oz can crushed tomatoes, 1 can diced tomatoes + 1 tablespoon sugar.
- Cook 3 hrs on low heat.
- In the last hr of cooking, add 3-15.5oz cans of Cannellini beans.
- Cook any kind of pasta, reserve 2 cups of pasta water.
- Drain pasta and add to Sause.
- Let sit 10 min.
- Add some reserved pasta water if needed.
