Udon Noodles with Beef

A quick stir-fry of tender beef, udon noodles, and vegetables in a savory soy-oyster sauce.

Ingredients

  • beef, cut into strips (200 g)
  • onion, sliced
  • garlic cloves, minced
  • napa cabbage leaves, sliced
  • green onions, sliced into 1 cm pieces
  • pre-cooked udon noodles (400 g)
  • soy sauce
  • oyster sauce
  • mirin
  • light brown sugar
  • rice vinegar
  • vegetable oil

Steps

  1. Bring a pot of water to a boil.
  2. Cut the beef into strips and marinate in 1 tablespoon soy sauce for 10 minutes.
  3. Cook the udon in the boiling water for 2 minutes, then pour cold water over them to firm them up.
  4. In a bowl, combine the remaining sauce ingredients: 2.5 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 tablespoon mirin, 2 teaspoons brown sugar, and 1/2 teaspoon rice vinegar.
  5. Heat a little oil in a saucepan over high heat and sauté the beef for 5 minutes until browned, then set aside.
  6. Sauté the minced garlic for 2 minutes until it browns.
  7. Add the onion and white parts of the cabbage; sauté for 5 minutes.
  8. Add the green parts of the cabbage and green onions; sauté for 2 minutes.
  9. Add the noodles and beef back to the pan; sauté for 3 minutes.
  10. Pour in the sauce and reduce while stirring for 5 minutes, or until almost completely reduced for best flavor.
