Udon Noodles with Beef
A quick stir-fry of tender beef, udon noodles, and vegetables in a savory soy-oyster sauce.
Ingredients
- beef, cut into strips (200 g)
- onion, sliced
- garlic cloves, minced
- napa cabbage leaves, sliced
- green onions, sliced into 1 cm pieces
- pre-cooked udon noodles (400 g)
- soy sauce
- oyster sauce
- mirin
- light brown sugar
- rice vinegar
- vegetable oil
Steps
- Bring a pot of water to a boil.
- Cut the beef into strips and marinate in 1 tablespoon soy sauce for 10 minutes.
- Cook the udon in the boiling water for 2 minutes, then pour cold water over them to firm them up.
- In a bowl, combine the remaining sauce ingredients: 2.5 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 tablespoon mirin, 2 teaspoons brown sugar, and 1/2 teaspoon rice vinegar.
- Heat a little oil in a saucepan over high heat and sauté the beef for 5 minutes until browned, then set aside.
- Sauté the minced garlic for 2 minutes until it browns.
- Add the onion and white parts of the cabbage; sauté for 5 minutes.
- Add the green parts of the cabbage and green onions; sauté for 2 minutes.
- Add the noodles and beef back to the pan; sauté for 3 minutes.
- Pour in the sauce and reduce while stirring for 5 minutes, or until almost completely reduced for best flavor.
