Steak Fajita Tacos

Sirloin, onions, and peppers seared hot and tucked into warm tortillas with a creamy chipotle-lime sauce.

Ingredients

  • Tequila lime seasoning, 3-4 dashes (or to taste)
  • 1 1/2 cups sour cream
  • Chipotle in adobo (at least 4 peppers, with sauce)
  • 1 lime
  • Sirloin steak
  • 1 red onion, sliced
  • 2-3 red bell peppers, sliced
  • 2-3 garlic cloves, minced (or garlic powder)
  • Mission street taco tortillas
  • Cilantro, chopped
  • Olive oil, for marinating and cooking

Steps

  1. Make the sauce: blend the tequila lime seasoning, sour cream, chipotle peppers (with their sauce), and the juice of 1 lime until smooth. Set aside.
  2. Chop the cilantro. Marinate the minced garlic in a little olive oil.
  3. Slice the red onion and bell peppers into strips.
  4. Toss the sliced sirloin with a light coating of tequila lime seasoning and olive oil.
  5. Preheat a skillet over high heat; add a thin layer of oil and heat until it just smokes.
  6. Sear the sirloin briefly, then add the onion and peppers and cook until the steak is done (cut a piece to check). Season to taste.
  7. Add the tortillas to the skillet, warm one side, flip when lightly toasted, then stack and keep warm.
  8. Just before serving, stir the garlic oil into the meat and vegetables. Serve in the warm tortillas with the chipotle-lime sauce and cilantro.
