Steak Fajita Tacos
Sirloin, onions, and peppers seared hot and tucked into warm tortillas with a creamy chipotle-lime sauce.
Ingredients
- Tequila lime seasoning, 3-4 dashes (or to taste)
- 1 1/2 cups sour cream
- Chipotle in adobo (at least 4 peppers, with sauce)
- 1 lime
- Sirloin steak
- 1 red onion, sliced
- 2-3 red bell peppers, sliced
- 2-3 garlic cloves, minced (or garlic powder)
- Mission street taco tortillas
- Cilantro, chopped
- Olive oil, for marinating and cooking
Steps
- Make the sauce: blend the tequila lime seasoning, sour cream, chipotle peppers (with their sauce), and the juice of 1 lime until smooth. Set aside.
- Chop the cilantro. Marinate the minced garlic in a little olive oil.
- Slice the red onion and bell peppers into strips.
- Toss the sliced sirloin with a light coating of tequila lime seasoning and olive oil.
- Preheat a skillet over high heat; add a thin layer of oil and heat until it just smokes.
- Sear the sirloin briefly, then add the onion and peppers and cook until the steak is done (cut a piece to check). Season to taste.
- Add the tortillas to the skillet, warm one side, flip when lightly toasted, then stack and keep warm.
- Just before serving, stir the garlic oil into the meat and vegetables. Serve in the warm tortillas with the chipotle-lime sauce and cilantro.
