Spinach & Feta Hash Brown Casserole

A baked breakfast casserole — hash brown patties layered with sautéed onion and wilted spinach, feta, and a mozzarella top, set with eggs and milk. Freezes and reheats well.

Ingredients

  • 1 box hash brown patties (about 9 patties)
  • 10 eggs
  • 1 cup milk
  • Feta crumbles
  • Mozzarella cheese
  • 1 small onion, diced
  • 2 bags spinach
  • Salt
  • Pepper

Steps

  1. Preheat the oven to 375°F.
  2. Sauté the onion until soft.
  3. Add the spinach and cook until wilted.
  4. Arrange the hash brown patties in a single layer in a greased baking dish.
  5. Scatter the onion and spinach over the patties.
  6. Sprinkle the feta evenly over the top.
  7. Whisk together the eggs, milk, and pepper with a small amount of salt (go easy — the feta is salty).
  8. Pour the egg mixture evenly over the casserole.
  9. Top with a layer of mozzarella.
  10. Bake uncovered for 45–55 minutes, until the center is set and no longer jiggles. If the top begins browning too much before the center sets, loosely tent with foil.
  11. Make-ahead: this freezes well. Reheat covered at 350°F for 60–90 minutes, until hot all the way through.
