Simple Roasted Potatoes

Crispy roasted potatoes with dried herbs and garlic powder, baked until golden brown.

Ingredients

  • 2 pounds Yukon gold potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dry parsley
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Pepper, to taste

Steps

  1. Soak potatoes in cold water for 1 hour, then drain and pat dry (optional, for fluffier texture).
  2. Preheat oven to 425°F.
  3. Scrub potatoes and cut into halves or quarters; don't peel.
  4. Toss potatoes with olive oil, rosemary, parsley, thyme, garlic powder, salt, and pepper.
  5. Spread on a baking sheet in a single layer (don't crowd) and bake for 30–40 minutes, until golden brown and tender.
