Simple Roasted Potatoes
Crispy roasted potatoes with dried herbs and garlic powder, baked until golden brown.
Ingredients
- 2 pounds Yukon gold potatoes
- 2 tablespoons olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon dry parsley
- 1 tablespoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt, to taste
- Pepper, to taste
Steps
- Soak potatoes in cold water for 1 hour, then drain and pat dry (optional, for fluffier texture).
- Preheat oven to 425°F.
- Scrub potatoes and cut into halves or quarters; don't peel.
- Toss potatoes with olive oil, rosemary, parsley, thyme, garlic powder, salt, and pepper.
- Spread on a baking sheet in a single layer (don't crowd) and bake for 30–40 minutes, until golden brown and tender.
