Shrimp Scampi
from Chris's kitchen.
Shrimp sautéed in butter, olive oil, garlic, and white wine, tossed with pasta and finished with parm cheese.
Ingredients
- frozen cleaned + tail off cooked shrimp
- 1 stick butter
- 1/3 cup olive oil
- 2 cloves fresh garlic or 1/4 teasp garlic powder
- 1 tablespoon dry parsley
- 1/3 cup dry white wine
- pasta
- parm cheese
Steps
- Heat 1 stick butter and 1/3 cup olive oil.
- Add 2 cloves fresh garlic or 1/4 teasp garlic powder and 1 tablespoon dry parsley.
- Sauté for approx 1 min.
- Add 1/3 cup dry white wine, bring to boil, then turn heat to low.
- Add shrimp and cook until shrimp are hot.
- Cook pasta and reserve 1 cup pasta water.
- Drain pasta then add to shrimp scampi.
- Let sit for 10 min so pasta absorbs Sause.
- If too dry, add some reserved pasta water.
- Top with parm cheese.
You can cook rice instead of pasta if you want. If you make less, use less oil, butter and wine.
