Shrimp Scampi
from Chris's kitchen.

Shrimp sautéed in butter, olive oil, garlic, and white wine, tossed with pasta and finished with parm cheese.

main italian 2 lbs shrimp to 1 lb pasta

Ingredients

  • frozen cleaned + tail off cooked shrimp
  • 1 stick butter
  • 1/3 cup olive oil
  • 2 cloves fresh garlic or 1/4 teasp garlic powder
  • 1 tablespoon dry parsley
  • 1/3 cup dry white wine
  • pasta
  • parm cheese

Steps

  1. Heat 1 stick butter and 1/3 cup olive oil.
  2. Add 2 cloves fresh garlic or 1/4 teasp garlic powder and 1 tablespoon dry parsley.
  3. Sauté for approx 1 min.
  4. Add 1/3 cup dry white wine, bring to boil, then turn heat to low.
  5. Add shrimp and cook until shrimp are hot.
  6. Cook pasta and reserve 1 cup pasta water.
  7. Drain pasta then add to shrimp scampi.
  8. Let sit for 10 min so pasta absorbs Sause.
  9. If too dry, add some reserved pasta water.
  10. Top with parm cheese.

You can cook rice instead of pasta if you want. If you make less, use less oil, butter and wine.
