Roasted Brussels Sprouts

Simple roasted brussels sprouts with a golden, crispy exterior. For a sweet variation, substitute or add carrots and toss with a little brown sugar along with the oil and salt.

Ingredients

  • Brussels sprouts
  • Olive oil
  • Salt

Steps

  1. Preheat oven to 375°F.
  2. Trim the brussels sprouts and halve them (quarter any large ones).
  3. Toss with salt and olive oil, mixing with your hands so the oil gets inside the sprouts.
  4. Spread on a baking sheet in a single layer with good space between them (use two pans if needed).
  5. Roast for about 20 minutes, checking for softness on the inside.
  6. When tender, increase heat to 425°F and continue roasting until browned, about 5–10 minutes.
