Mama's Stuffed Mushroom Casserole

Chris's stuffed-mushroom-inspired casserole — sausage, mushrooms, spinach, and cream cheese baked under a buttered breadcrumb crust.

main 25–30 min at 375°

Ingredients

  • 1 lb ground sausage
  • Olive oil, a little
  • Mushrooms, diced
  • Onions, diced
  • Garlic
  • Fresh or frozen spinach
  • Approximately ½ block cream cheese
  • Cheddar cheese, depending on how much you make
  • Butter
  • Breadcrumbs
  • Baguettes, for serving

Steps

  1. Brown lb ground sausage in little olive oil, remove from pan, drain if needed.
  2. Sauté diced mushrooms and onions till soft.
  3. Add garlic and fresh or frozen spinach, sauté a little longer.
  4. Add approximately ½ block of cream cheese and some cheddar cheese depending on how much you make.
  5. Add sausage back in, mix well, put in casserole dish.
  6. Add some butter to breadcrumbs, sprinkle on top.
  7. Bake at 375° for about 25–30 minutes.
  8. Serve with baguettes.
