Mama's Stuffed Mushroom Casserole
from Chris's kitchen.
Chris's stuffed-mushroom-inspired casserole — sausage, mushrooms, spinach, and cream cheese baked under a buttered breadcrumb crust.
Ingredients
- 1 lb ground sausage
- Olive oil, a little
- Mushrooms, diced
- Onions, diced
- Garlic
- Fresh or frozen spinach
- Approximately ½ block cream cheese
- Cheddar cheese, depending on how much you make
- Butter
- Breadcrumbs
- Baguettes, for serving
Steps
- Brown lb ground sausage in little olive oil, remove from pan, drain if needed.
- Sauté diced mushrooms and onions till soft.
- Add garlic and fresh or frozen spinach, sauté a little longer.
- Add approximately ½ block of cream cheese and some cheddar cheese depending on how much you make.
- Add sausage back in, mix well, put in casserole dish.
- Add some butter to breadcrumbs, sprinkle on top.
- Bake at 375° for about 25–30 minutes.
- Serve with baguettes.
