Chimichurri

A bright, herbaceous Argentinian sauce with fresh parsley, garlic, and vinegar — perfect for grilled meats, vegetables, or bread.

Ingredients

  • 1/2 cup chopped fresh parsley (flat-leaf)
  • 4 cloves garlic, chopped
  • 1 shallot, chopped
  • 1 teaspoon dried oregano
  • 1 small red chili, seeded and diced (or 2 tsp red pepper flakes)
  • 3 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 2/3 cup good-quality extra-virgin olive oil

Steps

  1. Combine parsley, garlic, shallot, oregano, chili, red wine vinegar, salt, and pepper in a food processor; pulse until finely minced (not a paste).
  2. Transfer to a bowl, pour olive oil over the mixture, and gently stir to combine.
  3. Let stand 15 minutes before serving.
