Buttermilk Biscuits

Crisp, tender biscuits made with frozen grated butter and your choice of fresh buttermilk or a quick milk-lemon substitute.

Ingredients

  • 240 g all-purpose flour
  • 20 g baking powder
  • 2 g baking soda
  • 10 g kosher salt
  • 1 stick butter, frozen
  • 240 g buttermilk (or 240 g milk + 15 g lemon juice, rested 5 minutes)

Steps

  1. Mix the flour, baking powder, baking soda, and salt.
  2. Add the frozen grated butter and stir with a spoon until the flour evenly coats all the butter shreds.
  3. Make a well in the center and add the buttermilk (or milk-lemon mixture). Stir just until combined—do not overmix.
  4. Turn out onto wax paper and gently form into a 1-inch-thick round disc.
  5. Cut with a 2-inch biscuit cutter, pressing straight down without twisting. Gather scraps, reform, and cut again—you should get about 12 biscuits.
  6. Dimple the tops lightly with your fingertip.
  7. Bake at 400°F for 15–20 minutes until golden brown.
