Buttermilk Biscuits
Crisp, tender biscuits made with frozen grated butter and your choice of fresh buttermilk or a quick milk-lemon substitute.
Ingredients
- 240 g all-purpose flour
- 20 g baking powder
- 2 g baking soda
- 10 g kosher salt
- 1 stick butter, frozen
- 240 g buttermilk (or 240 g milk + 15 g lemon juice, rested 5 minutes)
Steps
- Mix the flour, baking powder, baking soda, and salt.
- Add the frozen grated butter and stir with a spoon until the flour evenly coats all the butter shreds.
- Make a well in the center and add the buttermilk (or milk-lemon mixture). Stir just until combined—do not overmix.
- Turn out onto wax paper and gently form into a 1-inch-thick round disc.
- Cut with a 2-inch biscuit cutter, pressing straight down without twisting. Gather scraps, reform, and cut again—you should get about 12 biscuits.
- Dimple the tops lightly with your fingertip.
- Bake at 400°F for 15–20 minutes until golden brown.
